The colder weather was enough to trigger it. Once I added some coolant the code cleared and the CEL went away after about 3 drive cycles (about 3 days later).

P0128 is pretty common. Even a low coolant level has thrown the code in mine. Luckily when the t-stat fails, it fails open instead of closed, so at least the coolant keeps flowing. On my 2013 JKUR the t-stat isn't a separate item, and I am pretty sure that is the norm.
